Lemon Tarts
Ingredients
- 1 cup White flour
- 1/2 cup Soft butter
- 1/4 cup Icing Sugar
- 1/4 tsp Vanilla Extract
- 1/4 tsp Salt
- 2 Eggs
- 1 Egg Yolks
- 1 cup Sugar
- 2 tbsp White Flour
- 1/4 cup Lemon Juice
Freshly squeezed, please - 1 tbsp Lemon Zest
Freshly grated, please
Preparation
- Preheat the oven on Convect at 350°C.
- Combine the ingredients for the crust (flour, butter, icing sugar, vanilla and salt) into a big bowl. Mix well.
- Spread in an oven dish to form a crust. Poke with a fork to make tiny holes.
- Cook for 22 minutes.
- During that time, combine all the other ingredients (eggs + yolk, sugar, flour, lemon) into another bowl. Mix well.
- When the crust is done cooking, pour the lemon custard on top. Put in oven for 25 minutes.
- Let cool completely before cutting into bars.
