Lemon Tarts

Ingredients

  • 1 cup White flour
  • 1/2 cup Soft butter
  • 1/4 cup Icing Sugar
  • 1/4 tsp Vanilla Extract
  • 1/4 tsp Salt
  • 2 Eggs
  • 1 Egg Yolks
  • 1 cup Sugar
  • 2 tbsp White Flour
  • 1/4 cup Lemon Juice Freshly squeezed, please
  • 1 tbsp Lemon Zest Freshly grated, please

Preparation

  1. Preheat the oven on Convect at 350°C.
  2. Combine the ingredients for the crust (flour, butter, icing sugar, vanilla and salt) into a big bowl. Mix well.
  3. Spread in an oven dish to form a crust. Poke with a fork to make tiny holes.
  4. Cook for 22 minutes.
  5. During that time, combine all the other ingredients (eggs + yolk, sugar, flour, lemon) into another bowl. Mix well.
  6. When the crust is done cooking, pour the lemon custard on top. Put in oven for 25 minutes.
  7. Let cool completely before cutting into bars.
