Coconut Chocolate Bars
Ingredients
- 3 cup Coconut, shredded or powdered
- 4 tbsp Coconut milk
- 3 tbsp Honey
Maple syrup also works. Plus, it makes it vegan ! - 2 tbsp Coconut oil
- 1/2 tsp Almond extract
- 1 cup Chocolate chips
Semi-sweet or dark, both work fine
Preparation
- If coconut is not already powdered, process the coconut in the blender.
- Melt the coconut oil.
- Mix together the powdered coconut, coconut oil, honey, almond extract, and 2 tbsp of the coconut milk.
- Pour the mix into a flat container (rectangular is recommended, and you might want to line it up with parchment or wax paper). Flatten as much as possible with a spoon, ramekin etc. Put into the freezer to chill.
- Melt the chocolate on low heat with the rest of the coconut milk.
- Once the chocolate is melted, pour it on top of the coconut mix.
- Put back in the freezer to chill for at least an hour.
- Cut down to bite-size pieces.
